The Great New York State Fair

Whether you come for the concerts, the Midway rides, 25-cent milk or your annual search for the most over-the-top fair food or drink you can find, there's plenty of ways to pack your day or experience a multi-day adventure in Syracuse.

Visiting from out of town? Check out our 2026-2027 Visitor Guide that covers the Greater Syracuse Area before you arrive for places to stay, eat, and explore in addition to the Fair.

We put together this cheat sheet to help you make the most of your time this year at the 2026 Great New York State Fair.

Come for the fair, stay for the show. The 2026 concert series brings more than 40 national recording acts to Chevy Court and Suburban Park and concerts are included with daily park admission.

At Chevy Court, catch performances throughout the day at 1 p.m. and 6 p.m., plus two special 9 p.m. shows. This year’s lineup includes artists like The Commodores, Quiet Riot, The Calling, Cooper Alan and Hinder, with plenty more taking the stage throughout the 13-day celebration.

Over at Suburban Park, the music keeps going with an 8 p.m. concert every night. The 2026 lineup features The All-American Rejects, Sean Paul, Melissa Etheridge, Third Eye Blind, Flo Rida, Scotty McCreery, ZZ Top, Violent Femmes and more.

You can't talk about the Great New York State Fair without talking about the food.

Come hungry and make your way around the Fairgrounds for everything from refreshing lemonade and barbecue, to fried favorites like pizza, cheese curds, loaded potatoes, sweet treats and plenty of only-at-the-Fair creations.

You’ll also find plenty of New York flavor throughout the Fairgrounds. Stop into the Horticulture Building to explore the Taste NY Market, sample New York-made products and discover another side of the state's food and agriculture scene.

Our advice? Don't fill up at your first stop. There's always something else worth trying around the corner, so even consider splitting a bunch of things with your friends and family while there.

There are a few Great New York State Fair traditions you simply have to see at least once, and two of the biggest are made from materials you probably don't have in your art supplies at home.

First, head to the Center of Progress Building to see the annual Sand Sculpture, where artists transform piles of sand into a massive, intricately detailed work of art.

Then make your way to the Dairy Products Building for one of the Fair's most recognizable traditions: the Butter Sculpture. The annual display uses 800 pounds of recycled New York butter and celebrates a new theme each year. The theme is usually revealed a day or two before the fair opens! Keep an eye on our socials to see what we post.

Both are classic photo stops and a must for first-time fairgoers or your annual visitor.

Bright lights, carnival games and plenty of thrills. The Midway is where the classic fair experience comes to life.

Operated by Wade Shows, the Midway offers rides and attractions for fairgoers ready for everything from family-friendly fun to bigger thrills. Test your skills at a carnival game, take in the lights after dark or head high above the Fairgrounds for a bird's-eye view of all the action.

The Midway is scheduled to operate from 11 a.m. to 11 p.m. daily, but closes at 9 p.m. on Labor Day. Hours may change due to weather or other conditions, so check the Fair's website and social channels during your visit.

The Great New York State Fair has deep agricultural roots, and there are plenty of ways to experience them firsthand.

Explore the barns and agricultural exhibits to see cows, goats, sheep, poultry, horses and more. You can also catch various horse shows in the Coliseum and learn more about the people and industries behind New York agriculture.

Make a stop at the Dairy Cattle Barn to see the Milking Parlor in action, then head over to the Horticulture Building for flowers, produce, a working bee colony and SkyRiver Butterflies.

For families especially, this is one part of the Fair where slowing down and exploring can lead to some of the day's best discoveries.

Need a break between rides, food stops, and concerts? Spend some time browsing the Fair's many retail vendors and exhibitors.

You'll find everything from apparel, jewelry, and handcrafted items to home products, gifts, and plenty of things you probably weren't expecting to bring home from the Fair. (Maybe even a hot tub).

The Center of Progress Building is a great place to start your shopping, but keep an eye out as you explore the Fairgrounds. Vendors are located throughout the property.

Whether you're buying or just browsing, there's always something new to discover.

Few Fair traditions are as iconic or as affordable as the New York State Milk Bar.

Head to the Dairy Products Building for an ice-cold 25-cent glass of New York white or chocolate milk. While you're there, check out the Butter Sculpture and explore even more of New York's dairy industry.

Want to see where that milk begins? Stop by the Milking Parlor in the Dairy Cattle Barn to watch cows being milked and learn more about New York dairy farming.

For the full experience, visit on Dairy Day, Thursday, September 3, when the Fair puts an extra spotlight on one of New York's most important agricultural industries.

A special treat as the Fair winds down is the addition of strawberry milk at the milk bar! This is typically seen during the final weekend of the Fair, so keep your eyes peeled for updates and don't miss this iconic flavor.

One of the best parts of the Great New York State Fair is experiencing the cultures and communities that help make New York what it is.

The Asian Village returns August 26 through 31, celebrating Asian American, Native Hawaiian and Pacific Islander communities through food, music, dance and special events near Gate 4 and the Youth Building.

The Iroquois Indian Village welcomes fairgoers throughout the Fair to experience the culture and heritage of New York's original inhabitants through traditional music, social dances, crafts, food and other traditions.

At the NAACP Van Robinson Pan-African Village, explore African American history and culture through live music, African and Caribbean-inspired food and vendors.

Then, from September 2 through 7, visit Latino Village for a celebration of Latino food, music and culture through Labor Day.

Give yourself time to explore each village. Live performances, food, and cultural traditions make them much more than a quick stop along the way.

There's a lot to fit into one Fair day. Luckily, there's even more waiting beyond the gates.

Turn your trip to the Great New York State Fair into a Syracuse getaway by exploring our local restaurants, breweries, attractions, outdoor spaces, shopping and nightlife before or after your Fair visit.

The Fair also hosts a variety of Special Fair Days throughout its 13-day run. The 2026 schedule includes Student Youth Day, Pride Day, New Americans Day, Law Enforcement Day, Fire, Rescue & EMS Day, Women's Day, Sensory Friendly Day, Armed Forces Day, Dairy Day and more.

General admission is currently $8.32 online, including fees, while children ages 12 and under and adults ages 65 and older are admitted free every day. Special Fair Days offer additional admission opportunities for eligible fairgoers.
